| 【The Story Behind Koji Hara’s Custom Gyuto】 原幸治 originally did not make kitchen knives, and had no intention of doing so. The reason was simple: to produce a custom kitchen knife that met his own standards required far more effort than making a pocket knife, and was not worth it from a practical standpoint. However, one day, he gave in to repeated requests from a few long-time customers who desperately wanted to use a kitchen knife made by him, and he eventually agreed to make them. These knives were made only for his regular customers and were never sold to the general public. So why are they now being sold through our company,Munemasa Hamono? In 2010, his supply of ATS-34 steel ran out, and production of custom kitchen knives came to an end. At that point, Munemasa Hamono — with whom he had a long-standing relationship — stepped in. The remaining steel, enough for only around a dozen pieces, was entrusted entirely to Munemasa Hamono. And that is how these knives came into their hands. |
