    Matthew

This is a beautiful knife, I use it mostly for breaking down poultry, meat butchery and sometimes for firm fish such as hiramasa.
It retains it’s edge very well and is incredibly versatile and has a little weight behind it which is nice.
The handle feels slightly thicker than most octagonal handled knives I have seen before which feels really nice in the hand.
